There was a fix to put the old bezier pen tool (the Shift+F5 one) back in XD Pro 7, which I can't seem to find. Can anyone tell me what it was, and if it still works for XD Pro X?

The Pen tool still works. It hasn't gone anywhere except that it's no longer in the default Toolbox control bar. You can find the Pen tool icon in the Button Palette (Windows | Control Bars | Button Palette) and drag it onto the control bar of your choice.
As for the key shortcut, I still have the Shift+F5 key assignment for the Pen tool in my "Customize key shortcuts" function. (I added my preferred shortcut as a second assignment.) Are you saying that Shift+F5 is no longer activating the Pen tool for you? Could you have assigned Shift+F5 to something else as well?

The only tools that are on the flyout in XD Pro X are Freehand & Brush, Straight Line, Shape Tool, Shape Builder, Shape Eraser:
Shift+F5 brings up the Internet Explorer Preview window.
In XD Pro 7 there was a fix to add the Pen Tool (highlighted below):
which was also available in XD Pro 6 on the flyout:
It's that pen I'm trying to get in XD Pro X, where you press and drag each point to draw a bezier curve.
Open up the Controls bars >> Button palette and alt+drag the icon to your tool bar.
You can then assign a shortcut in the Utilities >> Customise key shortcuts editor
Sorry, I was looking at the shortcut utility in XDP7. AFAIK, you can't add the Pen tool to the flyout, but, as I mentioned above, you can put it on a control bar.
