    With a lot of patience.

For my Straw (house) go, I used a font with a transparency. A clone of the text, contoured. A Straw fill for the text.
To go further and grunge, you would convert Text to Editable Shapes and tweak each letter individually.

Perhaps someone could have a go with (a) Stone (house) and we could then throw in a wolf and some pigs.

Never give up. You will never fail, but you may find a lot of ways that don't work.

What kind of beveling do I use for the contour?

For mine i used no contour or beveling. I just filled the text as for the others I don't know.

What Gary used was an inner bevel. Play with the direction of the light source to give the best look.

And I created a bottom highlight by overlapping two copies of the text and using Subtract Shapes. The bottom highlight creates the impression of light catching the bottom part of the indentation.

I used an Inner Countour, 25 steps and 10px Countour Width.
I then added a Bitmap texture: if you set to Repeating and make smaller you seem to construct lettering made of straw.
