Just to add, you probably couldn't find it in help because Xara call it 'dummy text' rather than 'filler text' or 'placeholder text'.
They suggest remembering the shortcut (Ctrl + Shift + L) as "L" for Lorem as in ‘Lorem Ipsum’.

When I worked in advertising we called it Greek Text or Greeking. My wife who also worked in advertising worked on an ad for Sea World where one of the subheads was greeked until they could get the final copy. But the ad went off to the publication with the greeked subhead. It was not a happy day at her agency.

Yikes, I bet that was a frustrating day. I used to feel awful when something like that happed to me, especially typos caused by last minute changes.
Back in the day, Aldus PageMaker (the forerunner to Adobe PageMaker) used the term Greeking for text that was too small to read on screen. You could even change what font size you wanted Greeking to start from. It also had the benefit of making the screen redraw much quicker.
