The original template appears to have started life as single variant conventional desktop 955px wide - it's in my v17.0 Local Designs Library under classic/website themes; at some stage a mobile variant has been added. Old is a relative term, reflected more in style than content.
Most of the templates are relatively easy to edit (with care) and can be a good starting point. You can change the page width, edit the theme colours, extend the header to a full-browser width banner, reorganise and resize page content and so on.
You can create a very simple desktop/ mobile template as a base, simple header that transitions through scale-to-fit-width into a matching mobile variant.
