Default White background for windows. How do I get it back?

I managed to enable the dark color scheme for Windows 10. So instead of the File Explorer showing black text on a white background, it is white text on dark grey.

How do I get this back to black text on a white background?

Well that did restore the white backgrounds but now the taskbar is pale gray. I remember having this same frustration with my wife's laptop/
