So whenever I try to "Join text to curve" this is what happens. What am I missing?

As far as I'm aware, you don't need to "join text to curve" the deformation is created by the "REPEL TEXT UNDER".

The reason I want to join the text to the curve is so that I can manipulate the curvature of text afterwards. I can't bend the text without joint it first. Also, I don't know what you mean by, "REPEL TEXT UNDER". Is that something I need to turn off?

What version are you using Iggy? REPEL TEXT UNDER has been a feature for a few versions now (at least since V9 which is the oldest one I still have loaded). Once you invoke it, you can change the curvature of the text, by changing the shape of the repelling object.

Have a look at the example XAR that Acorn posted, and adjust the curves with the shape editor.
