    Risto - had any sour fish lately? Have you ever tried a "Digby Kipper"?

    Well I would have to eat the fermented fish late, late in the fall otherwise every fly in Eastern Canada would join the party.

    Besides, it is nothing you prepare yourself. It is something best handled by professionals.

    This treat is not legal in Canada so it has to be smuggled in to the country...

    So your fish is safe!

    And the Digby Kipper - Ever had one? (Some folks call them Digby Chicks).

    If you haven't I could send a few to you. That will really cause the posties to be upset! Because they are salted and smoked I'm sure they'll survive in a envelope for a few days (or even weeks).

    I have never had Kipper and I would love to try some. One of my favorites is cedar smoked White Fish - yummie!

    Sending smoked fish across Canada... [img]/infopop/emoticons/icon_smile.gif[/img] Sounds good to me, but could it really take our +30C summer heat?

    The fish has quite a bit of fat and moisture in it, even if it is smoked - wouldn't you just hate ending up in the papers as the Maritime culture promoter that poisoned that strange Swede in Montreal? [img]/infopop/emoticons/icon_smile.gif[/img]
