Linking email address

When I create a link to my email address on my pages, the link just opens a new page in the browser. Is there a way to have it open in the clients email program? I'm not sure how this is supposed to work. I'm setting my link by: Web properties> Link to Web or Email address:> & typing in the blank my@emailaddress.com

Yes, that is what you should do. When clicked by your visitor this will open her or his default email application.

I should add to this, if you have text such as Send email, and add the email link to this text, it will encode the email address until it opens at the other end. This hides the email address from spam bots that scour the web harvesting email addresses for spam lists.
