Web Design Help (1 Page Vs 10 Pages)

We are new here and have a question for anyone with experience.

We own www.stgeorgewebdesign.com

Question is, we see websites ranking on Google with a 1 page Wordpress layout, compared to let's say 10 individual pages.

We're thinking of changing our website. What are your thoughts and what are some good themes to use for a 1 page?

I don't have an answer for you yet, but how do you want to sell your services when you do not have a portfolio of work? Also your selling SEO services and your asking this?
