I know this can be resolved by assigning styles to all the fonts before creating the variant, but sometimes I forget to do this or miss a button/caption/section/mouseover/etc

You can change assests of any font styles in either the desktop and or mobile version.

For example, if you select part of a text block, say it's Normal text style, change it's font size, colour, alignment etc the text dropdown shows 'Normal text +' (note the + sign).

Select the dropbox & choose Update 'Normal text' in this variant.

This will mean that the Style 'Normal text' can be 12pt on the desktop and 20pt on the mobile version.
