is there a pdf or document that details the templates available with the wd7 software?

Not that I am aware of. You can go here http://www.xara.com/us/products/webdesigner/whatsnew/ for a complete list of features. Or you can look inside the Design Gallery to see what is available. And if you only have the download version you can go to Help > Download Templates to download all the available templates. The download file is over 200MB and even on a fast connection can take some time.

A member still has many of the templates loaded on his site. Note that Lou is using version 6 for the sample pages. But it should give you a better idea than...not much else.
