What is the difference between CMYK colors and Pantone Colors?

I am LUCK. I am using AI CS5. I would like to know what the differences are between CMYK colors and Pantone colors. I know nothing about both.

Will I get different colors if I change a Pantone Color to a CMYK Color when printing an offset printing?

Please help to explain in details if possible.
