Can anyone tell me how to take a segment out of a circle _ I ma sure it's dead simple but I just can't seem to do it. I need to take a 30 degree "pie slice" out of a 3d circle.

In Xara Photo & Graphic Designer 6: The easy way:
Make your circle.
Add the shape you want to remove (a rectangle or whatever), move it into place,
Ctrl+A.
Ctrl+4 will cut it.
Use F2 to pull the segment out.

Can also be done with WD5 without the extrude
