Welcome to Talkgraphics.
I've never converted a document from RGB to CMYK, so the method that I just tried may not be the best.
I opened one of my old documents and selected each colour individually. While that colour is selected I used the Color Editor to switch to the CMYK colour model and gave the colour a name.
By switching the colour model and applying a name to the colour is saved as CMYK rather than RGB.

I thought you had to make a change in the color to get it to keep the change in the color model.

Please provide more detail, specifically what material and what is the output intent?
There are two ways of generating CMYK content, export to TIFF, CMYK, or export to PDF/X (Xtreme 5 Pro only).

Gary I'm not sure what you are asking. I know the tiff and PDF/X export ability for CMYK.
I was simply answering how to have CMYK within the xara document so that when a fill handle is selected it displays the CMYK color model rather than RGB, or HSV.
Was I misunderstanding the OP's question?

Allison I think that giving the colour a name makes the color mode change stick with the color.

I think you're right. But then you could wind up naming a large number of colors. Depending on what you're doing, that could be useful or it could be unnecessary effort.
Since Bill has not been able to find his way back to the thread, Bill T., until we know Bill's reason for wanting to convert his work to CMYK, there is no right or wrong method.
If the question is, how can I create a CMYK work space, then there is one answer. Minimiro contributed a CMYK template many years ago which is in the Xara Xone Shareware > Templates page (Minimiro’s CMYK Color Model Template) page and can do this.
But if Bill wants to convert RGB to CMYK by exporting his work to PDF or TIFF he has the two methods previously mentioned.
And for creating a simulated CMYK viewing environment such as Adobe Illustrator's, Window > Show Printer Colors > Simulate Print Colors.
