Hello Galberke,
Welcome to Talkgraphics.
Fonts are actually complex shapes used for displaying text in a GUI environment.
Before you can fill an outline font you need to convert the text to it's constituent shapes then manipulate the shapes to make it look like the characters it formally represented. See the attached image for a quick example.
Closed shapes like the letter O, A, B, P, R, etc. will need to have some shapes subtracted from other shapes from the original parts to open the space that was enclosed. The multiple shapes will need to be moved from top to bottom to reveal all the shapes.
After making changes to open the O's etc. you can give the shapes any colour or fill you want.
This is a destructive process so the text is no longer editable as text.

Outline fonts come in several shapes and designs. To preserve and use the original shape of the outline font this is a way it may be done. A bit time consuming but fully achievable.

You certainly did, Bill! No need, however, to convert to editable shapes prior to step join shapes. Methods may vary. Example open outline.

Indeed
Having the two sets of fills - one set the size of the font itself, and the other set the size of the 'inside' of the font - can be useful if you require more than simply 'filling the gaps'
