Don't think I'm on target,yet...but I enjoyed doing it. As you can see I tried to give a 'stamp'effect...looking a little dried..caracteristic of this cheese. FB,please.

The chiseled look was perfect for the stone but inappropriate (IMHO--which almost never is) for cheese. If one were to stamp cheese, it would be very perfect, I should think.
Here's a thought, if a cheese were going to have this effect anywhere it would be on the red plastic covering. Why not add a bit of that glossy red covering and emboss the cheese maker's logo on it?

Thanks, Gary. Somewhere I saw on one of those flat round cheeses with a 'stamped' label or logo. But I don't think it was on the cheese itself...I think it was on a yellow wax covering or something. I'm going to give it a shot using the bright red (that's a wax, also..I think.) covering, like you suggested.
Thanx again. Always learning!

Here is my attempt at that waxy red coating that they put around cheese.
