Using the stroke panel resolved the issue.

We convert AI files into DXF files to use in our CNC Cutting
process. I.E. AI/EPS/PDF > Export DXF > CAD Import

I've received a PDF logo which upon opening in AI CS2 says that the font isn't recognized and is replaced with a substitute. Is there a way to force
AI to accept the text as a graphic instead ?

This is a much better approach. After exporting the
outlines, I was rewarded with two sets of lines atop one another, even though in a single layer.
Particularly nasty to remove as the overlapping...

After toggling the layer on and off twice,
then selecting, unselecting, and reselecting
the object, Live Trace > Make option becomes available and outline exports without incident.

It turns out that this is a Photoshop file,
converted into a PDF. Not sure if the Bridge
application is appropriate for this situation.
