Keith, open you offending Template.
Go Text Tool and type anything and ensure it is set to Normal.
Then change it to the required Font, Size, Colour, Emphasis, Spacing, Alignment, ...
With the changed text highlighted click on the Style dropdown and pick Update 'Normal' text to match.
Finally, delete the text so you have your required template look.
File > Save Template, picking the old one to replace or a new name to add this as a new Template.

Never mind ... Figured it out. You have to actually use the font to be able to edit a style to that font. You can't just change the styles.
