I've attached a raster image of a fill that is graduated along a curve (like these arrows). This effect always stumps me. I've tried Linear Fill, Circular, Elliptical, and Conical. Nothing seems to work. Can you suggest a solution? Many thanks!

Conical fill. You can double click on the fill path arrow to add new color control points. But do this for one arrow then clone and rotate the arrow 120 degrees. Clone and rotate again.

It can also be achieved using a four colour fill. But I think the best way is a blend along a curve, then change to editable shape. Delete the line from this group, then intersect it with the arrow.
Interestingly, the Smart Shape Arrows in the On-line Content Catalogue only use a linear fill.

I haven't looked at the smart shape Arrows, but I have always used linear fills. It takes close inspection to see the difference in appearance. But there is also a difference in output. In most cases, the output doesn't matter. But if one is doing something at scale it takes more care/thought to use a fill method other than linear.
Both the above methods output as bitmaps. Fine if everything is output at 100% scale, not so much if scaling will be involved. These two fill methods above are not (to my knowledge) supported in a PDF as smooth shade objects. Linear is and so vector remains as vector.
This is a quickie example of a linear fill.
