In Fine Art (many moons ago) we learned that you usually start with a white painted canvas because the light travels through the paint, hits the white surface and reflects back through the colours, giving them vibrancy (obviously not with a screen, but that was one reason). Also, while painting the colours you have some white areas for reference, and the best way to accurately see a colour’s qualities is when it is beside some white. This is why most paint companies print out their paint swatches on white paper, with each rectangle of colour separated from the others by white. For these reasons I would prefer a white UI, but I do understand the appeal of dark ones, what with screen brightness and users’ sore eyes. Still, my approach would have been to make the default white, and give sore eyed users the option to easily change it to dark grey.
