Usually, the jpeg format is all I use in digital.

I refer to and use EXIF all the time.
Digital camera photo's with EXIF removed are like a body without a soul

Yes, the EXIF is how you learn what you did, what you might need/want to do next time.

I use EXIF data all the time. How else is one to learn what settings to use for the really great shots? Automatic mode nevers gives one the best shots.
