I would say lynda.com I watched a few dozen ours of videos there and became on expert Photoshop and Illustrator user. Also if you are wondering what to learn I'd say learn to use the appearance panel and the pen tool. The pen tool is your last resort when nothing else does the job, and the appearance panel can greatly speed but your workflow because it uses metadata which can be flattened to vectors later.
