or a method that strokes in a selection can be scaled other than what is available in the Objects > Transform > Scale dialog?

Hmm. Perhaps what you are wanting to accomplish would be good in order to understand better.

I usually do the strokes via the appearance panel and manipulate them there...but that is for what I use strokes for. Maybe not relevant for what you want to accomplish.

Never, mind I see now this can be done via the Transform Pane which is better than plowing through the menu option mentioned above.
