Is it possible to change the cursor on these tools?
Most of my work with them involves tracing and I think I'd get a more accurate result with a simple dot rather than the current target/crosshair affair.

Unfortunately, not that I know of. I'm left handed. For me, cursors feel far more comfortable if they point up to the right rather than up to the left. I wish this could just be swapped.

I do a lot of manual tracing using the Shape Editor Tool. I work at as high as a zoom level as I can to get the best accuracy and work with a very thin line.
You can set up a second view and then use Ctrl Tab to go back and forth between views.

Yes I tend to go in close as is reasonably possible Gary. However I'm usually tracing a bitmap so the lines can tend to get undefined if you zoom in too much.
Hence my thinking that a dot would be better than trying to zero in through a tiny hole in the cross hair thingy.
