I'd never really thought about there being a default direction for the linear fill. If you draw a shape and click linear in the fill type then yes its horizontal. I don't think you can change that unless there is a registry setting you can alter.
Whenever I apply a linear fill I just click on the shape and drag, which I why I've never noticed the default direction; can't you just do that?
Otherwise you can copy the shape once filled and paste the attributes to other shapes to obtain the same direction.

if you hold down ctrl as you drag it will constrain the angle to 45deg increments - so that will prevent the line from leaving true vertical - unless you waver more than 44deg either side of course
