Can anyone tell me how to smooth a polygon model in Carrara 5 Pro?

Subdividing the mesh will make it smoother. Subdividing will also let you know if you have any problems with the mesh.

I think you have to be in the modeling room, select your object, and on the right panel there should be such options under the model tab...
