Ah ha. Just found I can use the Freeform Pen tool, and adjust the curve fit. I have to stroke the path afterwards, which is non-ideal, but at least I'm not fiddling with anchor points for hours.

Basically, I want a line of text to go round in a circle. This is very easy in Photoshop, I just draw a path with the ellipse tool and apply text to it, and it follows the path....
